Apple Oatmeal Bread

This recipe has found its way into the Lewis Labs Family’s heart because it is luxurious as well as a fiber powerhouse. For an extra, nutrient-rich fiber boost, it contains Fabulous Fiber, our balanced fruit, vegetable, and grain fiber concentrate with essential vitamins and minerals. 
Feel free to use xylitol instead of brown sugar to make this recipe even healthier. Serves two.

Ingredients
For the crumble topping:
  • 1 T butter, melted
  • 2 t brown sugar
  • 3 T dry oats
  • ½ t cinnamon
For the bread:
  • 1 C dry oats
  • 1 C whole-wheat flour
  • ½ t fine sea salt
  • 2 t cinnamon
  • ½ t baking soda
  • ½ t baking powder
  • 3 large eggs
  • ¼ C maple syrup
  • ⅓ C coconut oil, melted
  • 1 t vanilla extract
  • ⅓ C brown sugar
  • 2 C apple, peeled and chopped
  • 2 T Fabulous Fiber
  1. Heat oven to 350 degrees Fahrenheit. Spray a loaf pan with cooking spray. 
  2. Start by making the crumble. Melt the butter in a pan, add oats, cinnamon, and brown sugar. Mix well, and set aside.
  3. In a food processor, pulse the oats until the mixture is fine and has a flour-like texture.
  4. Place oat flour in a large bowl. Add the whole-wheat flour, salt, baking powder, baking soda, Fabulous Fiber, and cinnamon. Stir to combine.
  5. In a separate bowl, whisk together eggs, maple syrup, coconut oil, vanilla extract, and brown sugar. Fold in the chopped apples.
  6. Combine the apple mixture and the flour mixture and stir to incorporate. Pour batter into loaf pan and top with crumble mixture.
  7. Bake in preheated oven for 45-60 mins. Loaf is ready when a toothpick inserted to the center comes out clean.
  8. Allow the bread to cool on a rack before serving.
